BARBERA DI ALBA DOC

CONCA DEL GRILLO 1999

Thanks to its characteristics of adaptability to the various ecologic and climatic conditions, Barbera is a widespread classic grape variety ofPiedmont.

It lends itself well to the assembling and to a variety of vinification methods.

Most of the vines of the vineyard called CONCA DEL GRILLO are 40-year-old. During the summer, the number of grapes for shoot is reduced to just one to get the best ripening and concentration.

The harvest started on 3rd October and grapes, hand picked and harvested in small baskets, were immediately destemmed and left to ferment in small vitrified cement vats.

Fermentation lasted 10 days with frequent sprinkles and re-sinking of berry skins. During this time, two “delestages” had been carried out in order to get the most complete dissolution of the extractive substances.

Then, the drawing off and a light pressing of the marc completed the structure.

The day after, the wine was racked and put a part into barriques, a part into tonneaux and a part into Slavonic oak casks, where the wine slowly matured till the beginning of September.

The wine was then slightly clarified with albumin and, deliberately, bottled without having been filtered to leave intact its elegance and organoleptic potentiality.

After some months of ageing in bottle, in Spring CONCA DEL GRILLO is ready for the international market.
