Organolectic characteristics: Straw-yellow color with ashen-gray reflexes from dark copper colored to soft rose colored, delicate scent, typical of acacia, rich taste, and warm with pleasant and persistent flavor.

Gastronomic combinations:Seafood antipasto, seafood risotto, fish soups and stew, baked or grilled fishes.
